Honey Dijon vinaigrette

What did the vinaigrette say to the refrigerator?
Close the door, I’m dressing.

They say a good dressing makes the salad, and this homemade honey dijon vinaigrette certainly delivers. Beyond a bad refrigerator joke or two, this recipe is pure gold. By emulsifying classic ingredients with a simple whisk or jar shake, you get a creamy, vibrant dressing perfect for greens, grains, or our favourite chickpea salad.

Ingredients

  • 2/3 cup of olive oil

  • 1/3 cup apple cider vinegar (or white wine vinegar)

  • 1 tbsp of dijon

  • 1 tbsp raw honey

  • 1/2 tsp salt

  • 1/4 tsp pepper

  • 1 tbsp minced shallot/green onion/chives/garlic (or a combination)

Instructions

  • add oil, vinegar, dijon, and honey to a jar

  • mix vigorously with a whisk to emulsify. You can also use an immersion blender or, in the pictured recipe, I used a latte frother. A lid on the jar and enthusiastic shaking will also get it done.

  • add salt, pepper, & shallots

  • stir & enjoy
