Need a fast, nutritious meal that doesn’t sacrifice flavour? This hearty, healthy chickpea salad is your new go-to. Packed with crisp peppers, crunchy celery, and a tangy honey dijon dressing, it takes just 10 minutes to throw together. It is perfect for a quick weekday lunch or a simple side dish.

10 minutes, that’s all you need!

Ingredients (for two)

  • 1 can of chickpeas (or 1/2 cups of cooked)

  • 1 red pepper, diced

  • 1 yellow pepper, diced

  • 2 celery stalks, diced

  • 1/4 sweet onion (minced)

  • 1/3 cup Honey dijon dressing (or store bought)

Instructions

  1. drain and rinse canned chickpeas

  2. add chickpeas and all the other ingredients to a bowl

  3. toss & enjoy
