Mediterranean Quinoa Salad

This salad is full of all our family favourites. It’s perfect to make a big batch and keep in the fridge for quick lunches.

Ingredients

  • 2 cups cooked quinoa

  • 1/2 avocado chopped (grilled avocado is delicious)

  • 1/4 can sliced black olives, or olives of choice

  • 1/2 red pepper, diced

  • tbsp olive oil

  • 1/2 lime

  • 1/2 tsp salt (or to taste)

  • 3 - 4 mint leaves, shredded

Instructions

  • Mix together!

Notes

Some great additions are:

  • hemp hearts

  • 1/2 can beans

  • sunflower seeds

  • tomatoes

  • feta

  • goat cheese

Use lime/lemon directly on the avocado to keep from browning, or add just before you eat.
