White bean, artichoke hummus

Here’s a fun take on the classic.

Ingredients

  • 1 can cannellini beans, rinsed and drained
    or 1 1/2 cups cannellini beans cooked from dry

  • 170 mL (6 fl oz) jar of pickled artichokes
    (opt) remove on large chunk or artichoke to chop in after

  • 1 tbsp olive oil

  • 3 cloves roasted garlic

  • 1 tbsp tahini

  • juice of half a lemon

  • 1 tsp salt

  • (opt) minced chives for garnish

  • (opt) sesame seeds for garnish

Instructions

  1. add beans, artichokes (including brine), oil, garlic, tahini, lemon juice, and salt to blender

  2. blend until smooth

  3. garnish as desired

  4. enjoy!
