Crunchy Chickpea Nibbles

Feeling snacky? These plant-based snacks are loaded with protein and fibre. They cook up nicely and you can make a pretty good sized batch at one time to keep yourself set for days.

Ingredients

  • 1 can or 1.5 cups of cooked chickpeas (see note)

  • 1 tbsp olive oil

  • 1 tsp garlic powder

  • 1 tsp dill powder

  • pinch salt

  • pinch black pepper

Instructions

  1. preheat oven to 375°F

  2. drain and rinse canned chickpeas

  3. towel or air dry

  4. add to bowl and add seasonings

  5. spread chickpeas into a single layer on a baking sheet covered in parchment paper

  6. bake for 30 minutes, turning every ten minutes

  7. cool and serve

Note

I always use dried chickpeas. If you are using them, soak and cook them as usual. Then cool them and dehull. Dry the chickpeas and pick up at step #4.

You can use any seasonings you like. Zatar works well.
