100% Whole Wheat Pancakes

My pancakes are never that pretty, but they are delicious! This recipes is good for those days when you want pancakes but don’t want to sacrifice all the goodness of whole grains. They are ready and waiting for your favourite pancake toppings.

Ingredients — makes about 8 medium pancakes

  • 1 tbsp butter
    ~

  • 1/4 cup whole milk yogurt

  • 3/4 cup milk

  • 1 egg
    ~

  • 1 cup whole wheat flour

  • 1 tbsp sugar

  • 1/4 tsp salt

  • 2 tsp baking powder

Instructions

  1. preheat a nonstick pan on lowand grease with a tbsp of butter

  2. mix the wet ingredients (yogurt, milk, egg) together

  3. add the dry ingredients (flour, sugar, salt, and baking powder)

  4. whisk thoroughly

  5. increase pan heat to medium low

  6. spoon batter onto pan in desired sizes

  7. flip pancakes when the centre starts to bubble

  8. remove from heat and top with preferred pancake toppings

Notes

The acid in the yogurt activates the baking powder. The batter rises pretty quickly and gets quite thick. Work quickly.
